The formal restaurant at this flagship Meliá hotel has had a re launch in the past year and looks clean-cut and stylish, as does the wine list, which explores the undiscovered treats of modern Spain. The most important reason to visit L´Albufera is the cooking, with the hotel boasting this as ´the best Spanish food outside Spain´ as you would hope from a Spanish-owned hotel, it does a great job of showcasing its home cuisine. Choose a small selection of tapas to start – the anchovies in olive oil and a plate of Jabugo ham are unmissable and follow with an old-fashioned black squid paella or a more modern dish of morcilla (silky black pudding wrapped in a pistachio crumb) or superb foie gras with goats´ cheese, green apple & caramel.
