  The formal restaurant at this flagship Meli hotel has had a re launch in the past year and looks clean-cut and stylish, as does the wine list, which explores the undiscovered treats of modern Spain.

  The most important reason to visit LAlbufera is the cooking, with the hotel boasting this as the best Spanish food outside Spain as you would hope from a Spanish-owned hotel, it does a great job of showcasing its home cuisine.

  Choose a small selection of tapas to start the anchovies in olive oil and a plate of Jabugo ham are unmissable and follow with an old-fashioned black squid paella or a more modern dish of morcilla (silky black pudding wrapped in a pistachio crumb) or superb foie gras with goats cheese, green apple & caramel.
