Great idea, much like the salad bars that one finds in larger cities in the US, but not that successful once put into play.
They serve a varied set menu of wraps (which can be put on a baguette if you like), and a number of salads where you choose the base (jacket potato, greens, rice, or pasta) and choose a number of ingredients which they serve up for you, along with your choice of salad dressing.
The toppings for the salad are numerous and look pretty fresh; the price is reasonable, and I regret that I didn't go for the salad bar and instead chose a goat's cheese baguette with a heavily curry-spiced tomato chutney (not very good at all).
Not very exciting for a sandwich, so if you do decide to have lunch here, go for a salad instead.
